Meatloaf Cupcakes
A tasty meal: meatloaf topped with mashed potatoes
Servings
Ingredients
  • 1 lb Ground Beef
  • 1/2 lb Bacon (Optional) (grind bacon if possible)
  • 1 cup Saltine Crackers crushed (or Bread Crumbs)
  • 1/2 cup Onion chopped
  • 1 cup Green Bell Pepper (Optional) chopped
  • 1 Egg
  • 1 tbsp BBQ Sauce
  • 1 tbsp Worcestershire Sauce
  • 1 tbsp Ranch Dressing
  • 2 cloves Garlic chopped
  • 1 tsp Ground Black Pepper
  • 1 tsp Seasoned Salt
  • 1/2 cup Ketchup
  • 1/2 cup Brown Sugar
  • 4 cups mashed potatoes
  • 1 cup Cheddar Cheese shredded

  • 1 tbsp Worcestershire Sauce
  • 1 tbsp Ranch Dressing

  • 1 tsp Ground Black Pepper
  • 1 tsp Seasoned Salt
  • 1/2 cup Ketchup
  • 1/2 cup Brown Sugar
  • 4 cups mashed potatoes
  • 1 cup Cheddar Cheese shredded
Instructions
  1. Preheat oven to 350 degrees.
  2. Mix ground beef, saltine crackers, onion, bell pepper, egg, BBQ sauce, Ranch Dressing, Worcestershire sauce, garlic, black pepper and seasoned salt in a bowl.
  3. Stir ketchup, brown sugar in a bowl. Spoon ketchup mixture into the bottom of each muffin cup in a 6-cup muffin tin.
  4. Fill the muffin cups with beef mixture, leaving 1⁄2 inch space on the top.
  5. Bake in the preheated oven until no longer pink in the center, approximately 30 minutes.
  6. An instant-read thermometer inserted into the center should read at least 160 degrees.
  7. Drain fat from muffin cups.
  8. Top each ‘cupcake’ with mashed potatoes and cheddar cheese.
  9. Continue baking until cheese is melted, approximately 10 minutes.
