Lo Mein

Instructions
  1. In a small bowl, whisk together soy sauce, sugar, sesame oil, ginger and Sriracha. Set aside.
  2. In a large pot of boiling water, cook lo mein noodles according to package instructions; drain well.
  3. Heat olive oil in a large skillet or wok over medium high heat.
  4. Add garlic, mushrooms, bell pepper and carrot.
  5. Cook, stirring frequently, until tender, approximately 3-4 minutes.
  6. Stir in snow peas and spinach until spinach wilts, approximately 2-3 minutes.
  7. Stir in noodles and soy sauce mixture and gently toss to combine.
  8. Serve immediately.
Recipe Notes

If lo mein noodles aren’t available, spaghetti can be substituted.
